Instructions:
- 1. Wash your fresh chives or Green onion, and chop up one or two stalks, depending on how much onion you want(I usually use one, and then cook some in the omelet, and leave some aside to sprinkle fresh on top)
- 2. Put about a table spoon of olive oil, or some butter in a small pan and preheat it, this will prevent the omelet from sticking and add a little flavor
- 3. Break the 3 eggs into a bowl and whisk with a whisk or fork
- 4. Season the whisked eggs with the seasonings and mix them in, put in a few of the chopped green onion, and pour into the small pan. cover the pan with a lid if you would like it to cook a little faster(this way you also dont have to flip the omelet)
- 5. Once the top is mostly cooked sprinkle with your fave cheese, I usually use cheddar or colby jack! Then put the pre-washed spinach on one half of the omelet.
- 6. Let the spinach wilt a little, and then fold the omelet with a spatchula. Let it cook until the eggs are as done or as runny as you'd like, sprinkle some more cheese on top, and you're done!
** The cooking process should really only take about 5 to 8 minutes if you run your stove on low or medium low, depending on how well done you want your eggs and if you preheated the pan. I go a little on the long side so that I get crunchy edges!
