Instructions:
- 1. Peel the skin from the eggplants and cut into quarter inch slices
- 2. Whisk/ mix eggs and water (half a cup of water per 2 eggs), and mix until milky- like you would for french toast!
- 3. Use egg wash to cover eggplant slices in dry oats
- 4. Fry over low heat until golden brown, then add salt and pepper to taste!
