Instructions:
- 1. Mix flour and baking soda in a bowl
- 2. In a separate bowl whisk together the eggs, sugar, and honey until the batter is smooth
- 3. Add the dry ingredients into the wet and miz until smooth
- 4. Heat up a non-stick pan with a small amount of vegetable oil or olive oil(butter works too). Wipe off any excess, the pan should just be shiny and lightly coated. At medium-low heat drop 1/8 cup of batter onto the pan.
- 5. When the edges are dry flip the pancake and cook one more minute
- 6. Transfer to a plate and cover with a damp paper towel
- 7. Sandwhich 2 pancakes together with 1 tablespoon of Anko in the center. Wrap with plastic wrap and press together-pinch to seal the edges together.
*These are also really good with a little sugar sprinkles on while warm, honey, or even plain if you don't have Anko*
