2 tbs. fresh minced fresh chives, sage, and thyme -or- italian herb seasoning
Instructions:
1. Preheat oven to 425 F
2. Using a sharp knife cut each potato crosswise into 1/8th inch slices, leaving the slices attacthed at the bottom
3. Fan the potatoes slightly and place in a greased baking dish. In a separate small bowl mix the melted butter, salt and pepper. Drizzle the mix over the potatoes
4. Bake the potaoes unncovered for 50-55 minutes, or until potatoes are tender. While the potatoes are cooking toss the cheeses and herbs together in a new bowl.
5. After the 50-55 mins, sprinkle the herb and cheese mix over the potatoes and let cook another 2-5 minutes-until the cheese is melted (or crunchy if you prefer)
